Bright with a beautiful gold tint and concentration.
A bewitching and precise cuvée, expressing the marine universe, the pebble, the shell, the white flowers and the aniseed root environment linked to the fennel. The saline tension is palpable, a densification takes place and deliver noble flavors of butter, cream, praline then honey and mocha.
Delicate on the palate, this champagne has a natural fatty thickness. A gourmet flavor of peanuts, salted caramelized butter, pastries and fine woodiness. Energy, sapidity and precision.
Food and wine pairing
This cuvée will go perfectly with smoked salmon with tarragon, a fillet of gilthead sea bream with lemon butter sauce and fresh chives or a red tuna tartare with a cauliflower foam with green pepper and caviar.

Tasting notes
This vintage offers you a slightly shiny and transparent color on a light gold. The character of Chardonnay is faithful and very identity, the first scents reveal white fruits, flowers on a slightly minty fatty support.
The intensity then becomes clearer towards yellow citrus, white flowers and a few hints of aromatic herbs. Finally, the density increases, we perceive the sap and the fine chalk.
The palate is creamy, velvety and noticeably honeyed. It asserts itself at its heart with a tension reminiscent of granny apple and green citrus. The finish is chalk powder and the lemony graphite perceptions are tasty.
Food and wine pairings
This cuvée will enhance a delicate recipe such as a scallop ceviche or a grilled red mullet fillet, marinated in thyme and olive oil.
